my family is from st. micheals, azores
coming from a strong portuguese backround i can honestly tell you portuguese cheese from st jorge is the stinkiest, most foul curdled milk in the world. It is only available in Massachusetts and surrounding areas, so good luck finding some. (unless you live in portugal)
I could spare you the process, but i dont think i will:)
They make the cheese by whatever processes they employ, and then they let it sit for about 6 months until (no lie) bugs are actually crawling out of it.
they cut the excess mold off and dip it in a mixture that makes the bugs evacuate, then they dip it into wax and sell it. You can actually become ill from over-indulging in this cheese, just like bleau-cheese.
well there is also limburger, that could be its greatest opponent
