Why does nobody like warehouses? I think they are very usefull if they were quicker to use.
That isn't actually true. The reason is that if your city is built and defended properly and in a good alliance, you won't need warehouses at all. Warehouses tend to only be useful to research stockpiling and when you aren't in an alliance or stuck in the middle of nowhere and want/need to keep your city from being captured. The players with one city and a few warehouses can rebuild if they get leveled, and won't lose everything.

You used a logical fallacy by stating if you have warehouses then you will rely on them making that the only possible result which isn't true, there are many possible outcomes of having one or more warehouses. The only truth in your statement was that having a warehouse means you cannot have another building instead, but that's just like having another cottage. In one of my cities I only have 14 barracks because I need 11 cottages. That one barrack less doesn't really make a difference in troop production. In another city I actually had a warehouse and 15 barracks. Not having 16 barracks did not affect my troop production in that city, and I didn't rely on that warehouse for anything except researching stockpiling. Even if I kept that warehouse around, I wouldn't be relying on the warehouse due to lack of troop production with the 15 other barracks. Even if I decided to rip 2 of them down and build 3 warehouses and have 13 barracks, I'm still not going to be relying on the warehouses. The fact of the matter is that the warehouses would be rather pointless as they just sit there taking up space, but they wouldn't be negatively affecting troop production or forcing me to rely on them, they simply wouldn't be doing anything useful as resources that are not about to get looted from the city don't need warehouses to protect them.
I'm going to point out that the only time your statement might hold true is if your city isn't balanced properly, and then the problem isn't the warehouses, it's the way the city was put together in the first place. I've seen some really badly built cities, and the problems the cities had was not whether there were warehouses at all, but too many cottages and fewer than 10 barracks. I've seen some with 4-5 barracks and tons of low level cottages and a few warehouses. The warehouses didn't cause the problem (not that they weren't really helping, either), the number (and level) of cottages vs the number (and level) of barracks did.
As I said, you can build warehouses in a city, and you won't be worse off or end up relying on them just because you have them if you balance the city correctly.

Weather you have the warehouse or not you will need to build one to a lvl 10 for the stockpile research which increases your resource field capacity, alot of people neglect this or just dont know that that is a function of warehouse/stockpile.
