Mini SPAM Nacho Burgers.

* 3 plum tomatoes, seeded, diced
* 3 tablespoons diced red onion
* 3 tablespoons red wine vinegar
* 2 teaspoons chipotle chiles in adobo sauce, minced
* 2 teaspoons honey
* 1 (12-ounce) can SPAM (any type)
* 12 slices Cheddar cheese, cut into small squares
* 1 package Hawaiian sweet rolls, lightly toasted
* 1 cup guacamole
* 6 sliced red pickled jalapeno peppers, cut in half

1. In medium bowl, stir together tomatoes, onion, vinegar, chile in adobo sauce and honey.
2. Slice SPAM Classic into 6 (1/2-inch) slices. Cut each slice in half. Lightly grill or fry SPAM until lightly browned on both sides. Top SPAM with cheese; heat until cheese begins to melt.
3. Place grilled SPAM Classic on bottom halves of rolls.
Top each burger with guacamole, tomato-chipotle salsa and 1 piece jalapeno.

INGREDIENTS
1 (12-ounce) can SPAM Classic
3 tablespoons butter or margarine, softnened
8 slices white bread
4 slices American cheese

DIRECTIONS

1. Cut SPAM Classic into 8 slices.
2. Spread butter on 1 side of each slice bread.
3. Layer SPAM and cheese on unbuttered side of 4 slices bread; top with remaining bread, buttered side out.
4. On griddle or large skillet, cook sandwiches over medium heat until browned on both sides.
