Everything we do has an impact.
We need to eat to survive and in most cases, the animals we choose to eat are raised for the specific purpose of being eaten. If we did not eat them they may, as a species, have become endangered or extinct. It is because we value these species for their protein that they are very succesful as species and at no risk of becoming extinct, whereas other species which we do not eat have become endangered and some have even become extinct.

Instead of trying to raise animals that want to be eaten, we as consumers need to make sure that the animals we do consume are raised in an enviroment and in ways that give the animals a good life and not in ways that are detrimental or degrading. This is the direction that we need to point our farmers towards as it not only gives the animal a small amount of dignity but also delivers a healthier end product for us to consume.

As for eating a cat, or any other form of roadkill, I see nothing wrong with that as such but would prefer not to do so myself.
