I could teach you how to tie a Windsor knot, or help you select a nice Texan Bolo.... but lets' step outside the box and do my favourite tie.. a nice columbian neck tie.. first you select a sharp instrument used for dining on such wonderful cuts of meat like haggis or blood pudding... after a slice from jugular to jugular... a quick pull down and forward on your muscular hydrostat... remember... it's always nice to dress it up with a little Bling.. i recommend a silver stud for beginners.

Why are pig's feet so hard to debone after they've been braised?

I would love to state a reason on why, but other than the fact they are just too darn boney, i gots nothing.

BUT.. if you parboil them or blanch them first.. the tender tootsie meat will fall off those bones prior to a gentle braising... don't forget to skim the boiling pot for all those lovely floaters... they don't call it toe jam for nothing...it makes a wonderful glazing sauce with a touch of berry juice..

Does practice really make perfect?

One would like to think so, but i picked up a talent when i was a young teenager.. have practiced it daily for years, sometimes practiced upto 6 times a day, for hours... and if it was an Olympic sport, i'm still sure i wouldn't win even a bronze medal...


So.. take it in hand and play, play PLAY!!!!


Hopefully someday, it will be perfect, but with so many doing it, it's hard to say who is better...

Isn't it sad when jeeps die? My 92 cherokee died on christmas, of all days. Ended up picking up an Xterra, man, those are pretty solid rigs. Might want to check one out.
