I'm fairly certain such a device was used.
After all, the concept is simple and low tech, as well as working to the advantage of most castles being built on a hill.
Just because you cannot find log defenses on the internet also does not mean Evony is the only one. Log defenses were a simple but common defense for hilltop outposts. Not for major forts and castles.
By hilltop outposts, I mean back when using stone was too much and too time consuming. When the walls were built of wood logs and there was a gate, and that constituted a stronghold or outpost. Logs were a fast easy defense, required an axe and a hill. However, I think logs have not been used since maybe the times of the roman empire, possibly for a few hundred years after even. I do believe log defenses stopped being used when siege mechanics came about.
