The Portuguese were well known in the Middle-Ages, I want them up there. They split the world in half with Spain to explore and they basically ruled the seas...

I really have to agree with this. It's just Poland-Lithuania got too big, and the European nations around it lost a common enemy; The Ottoman Empire was no longer very aggressive. So they turned on Poland-Lithuania.

I feel as my favorites are:

The Byzantine Empire: Knowledge, Advances, same cause of death as old Roman Empire (corruption, civil war, barbarians).

Poland-Lithuania Commonwealth: Very interesting country, very powerful country. Great Cavalry. Remember Prussia in WWI? It was formerly a Teutonic Knight stronghold turned vassal of Poland after a religion switch to Lutheran.

the mongols in my opinion were the best during medieval time because not only did they destroy the European knights at their prime, but they also establish the largest empire ever until the British Empire.

The Byzantine Empire was not destroyed by Barbarians. In fact, when Mehmed II laid siege to Constantinople he used some "western" technology in the form of Urban's artillery. Until this poll is updated I don't think i'll vote.

By the way, is the pre-WWII Polish flag based on the Winged Hussars or were the hussars based on the polish flag?

Just so you know, the Mongoles never got far enough West to tangle with true European knights, and no the Tutanic knights were not really knights, and they also came a little late in the game to be fighting knights on the battle field.
