Personally, I like to purchase food with my excess gold. So I keep only a small reserve of 3-5 million for hero salaries, and buy food with the rest. My logic is that inflation is rampant so you can expect the value of all commodities to rise relative to gold. Also as your best attack hero levels up, you recruit faster and consume more resources so you might not have such a big surplus later.
