Why do people build more then 1 type of resource in a single city?

For the first city, I understand building multiple resource types to get you off the ground.
However, I don't know why anyone would not specialize in one resource type per city. All my cities have 1 resource type only. So far I have 2 lumber cities, 2 food cities, and am working on building an iron city. (Stone is worthless, so I just use the marketplace when I need stone) Any more than 1 resource type in a city is a waste of your valley bonuses.
Why would you want your resource valley to give a bonus to only 25% of your resource buildings when you could have a valley give a bonus to 100% of them?
Think about it. Your resource valleys would give you 400% more resources if you had only 1 resource type compared to if you had 4 resource types.
