I do build more than 1 type in a city. I don't keep my cities close to each other though. My closest are 18 miles apart. My furthest (from one end of my area to the other) is just over 115 miles apart. That allows me to project some combat power throughout a big swath of my alliance's area. It also reduces risk in the event of that one advance teleport of a war city "near me." It does make it harder to mass combat power by myself unless the target happens to be close to or inside the "cloud" of my cities. I also tend to "move around" by capturing new cities that fit the tactical situation. Some cities are more or less permenant and some are just waiting for a reason to be barbed so I can fill the slot with one captured in a more useful location.
Switching to a 1 resource per city model would limit my flexibility and come with other inefficiencies (building and feeding more transports for example). It would also limit my ability to collect resources from across a broad area.
