Gold is a better way of storing wealth that iron or lumber, at least whilst armies build.
Look at it this way- On N1, iron and wood go for 700-900 gold each.
So if I raid you for a mill lumber, I will have to send only 100 transporters.
If you store that mill lumber in gold, even allowing for a small loss in value because of converting it at the market, that would make 700 mill gold, and to plunder that, I'd have to send 700 transporters.
Not a problem so far, but take it up to sensible levels- say you had 10 million, or 100 million iron.....you'd have to send 1000 or 10,000 transporters.....not a huge problem for a mid level player.
Now multiply that by the 700 that each iron costs, and suddenly, to plunder you for that wealth, I'd have to send 7000 transporters, or 70,000.
Most of us will have the 7k transporters, but 70k? 
In itself, it's useless......they haven't changed the healing costs on N1 (or the tax costs for that matter) so they can effectively be totally ignored, but gold, because by definition is worth 1 gold per unit, can be a fairly effective way of slowing down a plunder process.
If I saw a city with 10 mill iron right next to a similarly protected city with 700 mill gold, I know which one I'd be raiding
