Not a big fan of the "genre" either (if you can call it that) but "Little Drummer Boy" I think is the best by far. I don't care who sings it.

Carol of the Bells and Handel's Messiah are my favorites.
I LOVE Christmas music....almost all of it, with the exception of some horrible country song I've heard (they won't stop playing it around here) about some little boy wanting to buy shoes for his mother because she's dying. TERRIBLE song.

I'm not particularly religious, nor am I sure this is technically a Christmas song.
But ever since I heard it in that West Wing episode, I have been quite fond of...

    ... Jeff Buckleys "Hallelujah"

    Rocking around the Christmas Tree
    at the Christmas party hop
Mistletoe hung where you can see
    Ev'ry couple tries to stop

You will get a sentimental feeling When you hear voices singing
"Let's be jolly; Deck the halls with boughs of holly" Rocking around the Christmas Tree
    Have a happy holiday
    Everyone's dancing merrily
In a new old fashioned way

    Rocking around the Christmas Tree
    Let the Christmas Spirit ring
Later we'll have some pumpkin pie
    and we'll do some caroling

You will get a sentimental feeling When you hear voices singing
"Let's be jolly; Deck the halls with boughs of holly" Rocking around the Christmas Tree
    Have a happy holiday
    Everyone's dancing merrily

Folks, when you know you are dealing with a spam bot will you PLEASE not quote it!

As it is now, I'll have to bother someone higher up to get rid of the Url in the quote.

    (Edit): Thanks Admin!
